02/07: The Crispy Parmesan Hasselback Fusion (You’ve Never Made It This Crispy Before)
Hi, my name is Erika. We are moving forward with Sweet Potato Week, and today’s recipe is a total game-changer. After our Greek adventure on Day 1, it’s time for a technical twist that will make you the star of the kitchen with almost zero effort.
I haven’t seen these two techniques combined quite like this before, so let’s shake things up a bit.
• The Chopstick Hack: Place your halved potato between two chopsticks. This allows you to slice it into thin, accordion-like strips without cutting all the way through. It’s effortless and looks incredibly professional. • The Cheese Bed: Drizzle a little oil onto your tray, then scatter a reckless amount of Parmesan over it. Season with garlic powder and pepper. • The Roast: Place the potatoes cut-side down onto the cheese, and brush the tops with that fragrant rosemary butter. Bake for 45 minutes until the base turns into a golden, crispy crust.
Serve it with a light, herb-infused sour cream or simply a touch of salt and pepper. You’ll experience a blend of textures that truly needs nothing else—except perhaps a glass of wine, but I’ll leave that part up to you.
