04/07 MEXICAN QUINOA STUFFED SWEET POTATOES
Ingredients with the Mexican Secret:
• 2–4 large sweet potatoes
• 1 tablespoon olive oil
• 1/4 cup chopped red onion
• 1/4 cup chopped red bell pepper
• 1/2 cup corn
• 1/2 cup cooked quinoa
• 1 cup black beans (drained & rinsed)
Spices
• 1 tablespoon chili powder
• 1 teaspoon cumin
• 1/2 teaspoon smoked paprika or chipotle
• salt & pepper
Secret Twist
• 2–3 small squares dark chocolate (70%+)
For serving
• mashed avocado
• tahini sauce or Greek yogurt
• fresh cilantro
• lime
How to Make Perfect Mexican Quinoa Stuffed Sweet Potato
•Preparation: Preheat your oven to 200°C. Wash the sweet potatoes, then cut them in half. Place them cut-side down on a baking tray lined with parchment paper. Lightly prick the tops with a fork. Roast for 35–45 minutes, until the edges start to caramelize and the inside becomes soft and tender.
• The Filling: While the potatoes are baking, heat olive oil in a pan. Add the chopped onion and red bell pepper, and sauté for about 5 minutes until softened and slightly golden.
• Bringing the flavors together: Add the cooked quinoa, corn, and black beans. Season with chili powder, cumin, smoked paprika or chipotle, and mix gently.

•Now comes the SECRET:
Add 2–3 small squares of dark chocolate and let them melt slowly into the mixture.
You won’t taste the chocolate directly…
but suddenly everything becomes deeper, richer, and more complex.
Cook for another 2–3 minutes so the flavors fully come together.
• Assembling: Let the sweet potatoes cool slightly, then spoon the warm quinoa mixture generously on top of each half.

Top with creamy mashed avocado, drizzle with tahini sauce or Greek yogurt, sprinkle with fresh cilantro, and finish with a squeeze of lime.

If you feel like elevating this dish even further, you can easily give it a completely new personality with just a few simple twists.
Try swapping the cilantro for fresh greens or spring onions, sprinkled gently on top. For something unexpected, add a handful of rum-soaked raisins — they bring a subtle sweetness that beautifully balances the smoky spices.
Or take it in a Mediterranean direction with crumbled feta and a few olives, and suddenly you have a completely different, yet equally special dish.
