Hi, my name is Erika, and I would like to share with you one of the most special sweet potato recipes I discovered a few years ago in Egypt.

I tasted it one morning, and it completely captured me. The way the warm, baked sweet potato met the cool vanilla yogurt, combined with fresh fruits and gently dripping honey, created a flavor experience I have never forgotten.

A feeling I wanted to recreate again and again.

This recipe is perfect for breakfast or as a light, healthy dessert.

07/07 Berry Vanilla Glow Sweet Potato

Ingredients ;

  • 2–4 medium sweet potatoes
  • 200 g vanilla yogurt
  • 1 banana
  • a handful of blueberries
  • a handful of raspberries
  • 1 kiwi
  • 2 tablespoons honey or maple syrup
  • a pinch of sea salt

Side:

  • granola
  • pumpkin seeds or walnuts
  • cinnamon

How to Make Berry Vanilla Sweet Potatoes

• Preheat the oven to 200°C.
• Wash the sweet potatoes and cut them in half lengthwise.
• Place them on a baking tray lined with baking paper, cut side down.
• Bake for 35–40 minutes until soft but still holding their shape.
• Remove from the oven and let them cool for a few minutes.
• Gently loosen the inside with a fork.
• Spoon vanilla yogurt over each half.
• Add sliced banana and fruits.
• Sprinkle with granola and seeds.
• Drizzle with honey or maple syrup.
• Finish with a light sprinkle of cinnamon and a pinch of sea salt.

Special Touch

The real magic of this recipe comes from a small but powerful detail.

In Egypt, the chef told me that while most people use cinnamon, his secret was something different.

He finely grates fresh nutmeg over the top just before serving.

This simple step transforms the dish completely. The flavors become deeper, warmer, and more intense, turning a simple breakfast into a truly unforgettable experience.

Expert Tips Variations 

You can take this sweet version even further.

After baking, lightly mash the inside of the sweet potato with a fork to create a creamier texture. Spread a thin layer of peanut butter over it.

Top it with banana slices, then finish with grated dark chocolate and crushed roasted peanuts.

This version becomes a rich, dessert-style dish with deeper flavors and a more indulgent texture.
