Italian Melted Sweet Potato Wrap - La Sfoglia Segreta


Hi, my name is Erika,

and if you wanna eat something really fun, special, and you love wraps… this is for you.

A few years ago, when I was in Northern Italy, I heard something I never forgot.

They said in a small hidden kitchen somewhere in the north, chefs stopped using dough…

and started creating magic from vegetables.

No flour. No heavy wraps. Just layers… and patience.

Thinly sliced sweet potatoes, placed next to each other like a delicate pastry,

baked slowly with melted cheese until they become one soft, golden sheet.

They call it La Sfoglia Segreta — the secret layer.

Crispy on the outside, tender inside…

Strong enough to hold everything, yet soft enough to melt with every bite.

And once you try it… you’ll understand why.

06/07 Italian Melted Sweet Potato Wrap

Ingredients ;

  • 2 large sweet potatoes
  • 1–2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 80–100g grated cheese (mozzarella or cheddar works best)

For the filling (optional but recommended):

  • grilled chicken / roasted tofu
  • fresh spinach or greens
  • red onion slices
  • cucumber or avocado
  • a light yogurt or garlic sauce

How to Make Italian Sweet Potatoes Wrap

• Preheat your oven to 200°C (390°F)

• Slice the sweet potatoes very thin

This is important — almost paper-thin slices work best

• Create the “secret layer”

Place the slices next to each other on a baking tray lined with parchment paper

Let them slightly overlap — like tiles or pastry layers

• Season & oil

Brush with olive oil, sprinkle salt, pepper, and paprika

• Add the cheese magic

Sprinkle grated cheese evenly over the top

This is what will hold everything together

• Bake for 20–25 minutes

Until golden, slightly crispy on the edges, but still flexible

• Let it rest (this is the secret!)

Don’t touch it immediately. Let it sit for 5–10 minutes

This is what makes it bind together

Not rushing it is the real trick

• Fill & roll

Add your fillings, then gently roll it like a wrap

Slice it in half and serve warm.
